Healthy Chocolate Dessert:The Best Chocolate Zucchini Cake Ever
After much digging in the family recipe bin, I found one of my childhood favorites! My mom used this recipe to help us eat vegetables when we went through the no-icky-green-things phase. It is super delicious, healthier than the average chocolate cake, and is easy to make! And it's been kid tested for taste!
Ingredients
- 1/2 Cup Butter
- 1/2 Cup Oil
- 1 3/4 Cup Sugar
- 2 Eggs
- 1 tsp Vanilla
- 1 tsp Baking Soda
- 1/2 tsp Cinnamon
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 2 Cups Shredded Zucchini
- 1/2 Cup Tangy Milk***, (Mix 1/2Tbsp Lemon juice to the milk and let it sit for 5 minutes)
- 4 Tbsp Cocoa
- 2 Cups Flour
Instructions
- Preheat oven to 325.
- Combine butter, oil, and sugar.
- Add eggs one at a time, and vanilla. Beat on med/high until smooth.
- Add dry ingredients and milk alternating.
- Mix in zucchini.
- Bake for 40-45 minutes.
- Add powdered sugar or a glaze on top when cool.
